I love having mince meat in the fridge because it’s so easy and quick to whip up a healthy, high protein meal. Especially when I’m busy during the week and don’t have more than 10 minutes to get a meal cooked and in the belly! This quick beef mince stir fry is the perfect solution for weeknight dinners and I often find myself eating it most of the week in various combinations. One of my favourites is to throw in a tablespoon of natural organic peanut butter at the end of cooking – delicioussss!

You can of course use organic chicken, turkey or even pork mince if you prefer and experiment with trying other veggies. I like chopping them up into small pieces so it cooks fast. You only need 1 pan to cook this, so it’s nice and quick to clean up too … I may or may not have eaten this straight out of the pan before to save washing a bowl …

Quick Beef Mince Stir Fry

Ingredients
500g organic grass fed beef mince
2 spring onions
1 brown onion
1 red capsicum
2-3 large handfuls baby spinach
1 tbsp Tamari sauce
2 tsp sesame oil

Method

  1. Chop up the spring onion, brown onion and red capsicum into 1cm pieces.
  2. In a non-stick pan, add the veggies and cook for a few minutes over a med-hot heat until starting to softened and brown.
  3. Add the beef mince and stir to break up, continue to stir fry for 5 minutes, then add the Tamari sauce and add the baby spinach on top. Allow the spinach to start wilting and then stir it through.
  4. Remove from the heat and drizzle the sesame oil over top.
  5. Serve as is or with some asian greens or broccolini on the side.
