There’s something about gluten free chocolate chip cookies that just makes me happy. They are a favourite treat of mine. However, I have little willpower around them, so tend not to actually bake them that often!

There’s lots of recipes out there for the “perfect cookie recipe” but let’s just talk about what MY perfect cookie is shall we? And I’m just going to hope that you feel the same as me…

A cookie should be:
  • Crispy and chewy.
  • Not sickly sweet.
  • Chocolate chunks over chips.
But of course it also had to be:
  • Wheat/gluten free.
  • Preferably dairy free.
  • Use healthier ingredients options.

I wasn’t going to try for sugar free or super-dooper healthy cookies, because honestly, I wanted it to still taste like a “real cookie”.

This culminated in two gluten free chocolate chip cookie recipes which are perfectly balanced between taste and healthiness. I would still say they are treats, but you can rest assure you’re not eating highly refined ingredients and no yucky preservatives or flavours. Homemade all the way please!

The Crispy Chewy Chocolate Chip Cookie

A more traditional cookie, with that perfect crispy chewy texture, despite being gluten free.

Serves: 20-30 cookies
Ingredients
  • 200g gluten free plain flour
  • ½ tsp baking soda
  • ½ tsp sea salt
  • 160g coconut sugar
  • 2 tsp coconut syrup
  • 140g unsalted organic butter, softened
  • 1 large organic egg
  • 1 tsp vanilla extract
  • 200g 70% dark chocolate, roughly chopped
Method
  1. Preheat a fan forced oven to 160 degrees and line a baking tray with baking paper.
  2. Add the flour, baking soda, sea salt to a large mixing bowl and set aside.
  3. In a small mixing bowl, cream the butter and coconut sugar together, then add the coconut syrup, egg and vanilla extract and whisk to combine.
  4. Add the creamed butter and sugar to the flour and mix until combined - it should be a doughy consistency. Then stir through the dark chocolate chunks.
  5. Scoop up about two scant tablespoons of the mixture and shape into a ball, then flatten a bit. They will spread, so you’ll only fit 8 onto the baking tray. Repeat in batches.
  6. Bake for about 15-18 minutes, depending on how crispy you want them. Cool on a wire rack completely before eating.

The Wholesome Oaty Chocolate Chip Cookie

With wholesome oats, you could be excused for eating one of these with your coffee in the morning 😉

Ingredients
  • 2 cups quick oats
  • 2 cups gluten free plain flour
  • 1 cup coconut sugar
  • 1 tsp baking soda
  • ½ tsp sea salt
  • 1 cup organic coconut oil, melted
  • ¼ cup almond milk
  • 3 organic eggs
  • 1 tbsp vanilla extract
  • 200g 70% dark chocolate, roughly chopped
Method
  1. Preheat a fan forced oven to 170 degrees and line a baking tray with baking paper.
  2. In a large mixing bowl, add the oats, flour, coconut sugar, baking soda, salt, melted coconut oil, eggs and vanilla and beat until combined and the dough holds together. Stir through the dark chocolate chunks.
  3. Scoop up about two tablespoons of the mixture and shape into a ball, then flatten (think rustic not perfect!). You’ll fit around 8-10 onto the baking tray (they won’t spread too much), so you will need to do a few batches.
  4. Bake for about 12-14 minutes. Cool on a wire rack completely before eating.
